Chicken & Mango Salad Recipe (Resep Salad Mangga dan Ayam )

Chicken & Mango Salad Recipe (Resep Salad Mangga dan Ayam )

For the dressing :

- 4 small brown shallots, thinly sliced
- 1 red chilli, seeded and finely sliced
- 1 clove garlic, finely sliced
- ¼ cup lime juice
- 3 tablespoons fish sauce
- 2 tablespoons sesame oil

For the salad :

- 3 single organic chicken breasts (about 900g), skinned
- 1 teaspoon salt
- thumb-size piece of ginger, slightly crushed
- 4 mangoes, peeled and flesh diced
- ½ cucumber, peeled and sliced
- 1 iceberg lettuce, cored and thickly sliced
- ½ cup fried shallots
- 2 tablespoons toasted sesame seeds
- ¼ cup sliced basil leaves
- ¼ cup sliced coriander leaves

How to Cook :

For the dressing :
Mix everything together well and set aside for 5 minutes.

For the salad :
- Put chicken in a saucepan with salt and ginger, cover well with cold water and bring to the boil. - Simmer for 15 minutes and then remove from heat.
- Drain and discard the ginger.
- Plunge the chicken into a big bowl of water with lots of ice in it to cool it down completely.
- If you are not using the chicken immediately, cover and refrigerate.
- Slice the chicken thinly across the grain.
- Place on a large serving platter with mangoes, cucumber and lettuce in relaxed separate piles. - - Drizzle dressing over and sprinkle shallots, sesame seeds and herbs on top.
- Serve immediately. Serves 6.
