Summer Fruit Tart Recipe ( Resep Summer Fruit Tart )

Summer Fruit Tart Recipe ( Resep Summer Fruit Tart )

Ingredients :

- 125g butter at room temperature
- 1 cup caster sugar
- 1 tsp vanilla extract
- 2 eggs
- 11/2 cups self-raising flour, sifted
- 1 tsp ground cinnamon
- 1/2 tsp baking powder
- 3 tbsp icing sugar, sifted
- 1-1 1/2 cups in total of seasonal fruit (cut into thin wedges if necessary), e.g. peaches, strawberries, pears, plums, nectarines, blueberries, raspberries, cherries, purple grapes, passionfruit.

How to Cook :

Preheat oven to 160C, grease a 22-centimetre round cake tin with removable base. In a medium bowl, beat the butter, sugar and vanilla until pale and creamy. Add the eggs one at a time, beating on a lower setting until just combined. Gently fold in the flour, cinnamon and baking powder using a wooden spoon until the mixture has just come together. It should be quite tactile and on the dry side. Spoon mixture into prepared tin and scatter the cut fruit and-or stud with the smaller berries. Dust the top with half the icing sugar and place in mid-oven and bake for one hour. The rim of the cake should be crust-like and the centre will be wetter. Turn oven off and leave to cool inside for further five to 10 minutes, then remove and leave to cool for a further 10-15 minutes before removing from tin and cutting. Dust with icing sugar and serve. It keeps in an airtight container for three days.
