Bandeng Bumbu Bali | Milk Fish with Balinese Sauce

Milk fish with Balinese Sauce is one of my favorite cooking. There's two reason why i like it so much.First, it has very delicous taste, sweet mixed with sour and hot taste, terrific! Second, Its not to hard to cook it. This Milk fish cooking is match for daily menu.

Ikan bandeng bumbu bali, benar2 salah satu masakan favorit saya, rasanya benar2 luar biasa dan Mak Nyess, campuran ras manis asam dan pedasnya benar2 menggoyang lidah. Apalagi cara memasaknya juga tidak terlalu sulit, cocok untuk menu sehari2 =)

The material:
500 g the bandeng(milk fish), cleaned
250 ml oil to fry
50 ml oil to saute at hugh temperature
2 tomatoes were divided into 8 parts
2 spoon of soy sauce

The material II:
1 spoon of ketumbar
3 cm old turmeric
2 pc garlic
1 tsp salt
50 ml water

The spice that was refined:
10 px red chillis
5 red onion
3 fangs garlic
3 cm ginger
4 items of candlenuts

How to make :
- smear the fish with material II , keep it like that for 15 minutes, afterward fried with middle fire til brownish color
- saute refined spice til smells good then insert tomatoe, soy sauce with 100 ml water, cook it til the tomatoe crushed and the water volume reduced.
- insert the milkfish cook til the spice infiltrate, lift it up and it's done!

TIP : To reduce the bad smell of milkfish, submerge the cutted milkfish with turmeric water & salt for about 1 hour.

Bahan :
* 500 g bandeng dibersihkan
* 250 ml minyak untuk menggoreng
* 50 ml minyak untuk menumis
* 2 buah tomat dibagi 8 bagian
* 2 sdm kecap manis

Bahan II :

* 1 sdm ketumbar
* 3 cm kunyit tua
* 2 siung bawang putih
* 1 sdt garam
* 50 ml air

Bumbu yang dihaluskan :

* 10 buah cabe merah
* 5 buah bawang merah
* 3 siung bawng putih
* 3 cm jahe
* 4 butir kemiri

Cara Membuat :

* Lumuri ikan dengan bahan II diamkan 15 menit, kemudian goreng dengan minyak yang sedang panasnya hingga kecoklatan
* Tumis bumbu yang dihaluskan hingga harum kemudian masukkan tomat, kecap manis dan 100 ml air masak hingga tomat hancur dan air agak berkurang
* Masukkan ikan bandeng masak hingga bumbu menyerap. Angkat.


TIP :
* Untuk mengurangi bau tanah pada bandeng, rendamlah bandeng yang sudah dipotong-potong dengan air kunyit dan garam agak lama (1 jam)
