Ingredients :
- 1/2 cup olive oil
- 2 large brown onions, chopped
- 4 garlic cloves, finely sliced
- Salt
- Freshly ground white pepper
- 4 yellow peppers, seeded, cut into squares
- 2 small red chillies, chopped
- 6 roma tomatoes, blanched, peeled, seeded and chopped
- 1 tbsp capers
- 2 tbsp white wine vinegar
How To Cook :
- Heat oil in a heavy-based saucepan.
- Add onion and garlic, season and cook gently until soft, about 10 minutes.
- Add capsicum and chilli and cook for 15 minutes.
- Add tomato and capers and cook for five minutes.
- Add one tbsp vinegar and simmer until thick and saucy.
- Add remaining vinegar, adjust seasoning and serve with fish, eggs or grilled meats.
Makes about 1.5 litres
