Pineapple Chicken Rice Recipe

Who likes pineapple ? i did , how about you ? as you now pineapple is a very tropcal fruit and its taste is so fantastic. How if we make chicken rice with pineapple taste? it could be very attractive , and of course very tropical.You could imagine what would it taste , must a mixture for sweet , sour and salty , must be very delicious , i guarantee that. Ok , today we wanna share you thre pineapple chicken rice recipe ( resep nasi goreng ayam) , we usually call this food in our Indonesia as resep nasi ayam nanas or nasi goreng ayam nanas . Ingredients :

-2 tbl vegetable oil
-1 lb boneless chicken cut 1/2" cubes
-3 cup chicken stock
-1 tsp salt
-2 cup uncooked jasmine rice washed and drained
-1/2 sm pineapple peeled, sliced,
-and cut in small pieces

Seasoning Ingredients :

-3 x shallots peeled, and
-finely chopped
-5 x garlic cloves
-1/2 x inch ginger root peeled and chopped
-1 tsp coriander seeds
-1/2 tsp white peppercorns
-1/2 tsp cumin seeds
-1 pch freshly-grated nutmeg or to taste
-2 x inches cinnamon stick
-2 x cardamom pods bruised
-2 x cloves
-1 x lemongrass stalk bruised

How to Cook :

-Blend all seasoning ingredients except cloves and lemongrass with a mortar and a pestle or a food processor to form a paste.
-Heat oil in a wok or heavy saucepan over medium-high heat and then add blended seasonings and the rest of the seasonings ingredients and stir-fry it for 2 to 3 minutes.
-Add the chicken and continue stir frying for about 3 minutes. Add chicken stock and salt and simmer until the chicken is tender. Strain the stock and set aside the chicken pieces.
-Place rice in a rice cooker or heavy stockpot, add 2 1/2 cups of the reserved chicken stock and bring to a boil. Cover the pan and simmer until the rice is almost cooked and the liquid absorbed.
-Add the diced chicken and cook over low heat until the rice is thoroughly cooked. Serve on a platter garnished with fried shallots and pineapple pieces.
-This recipe yields 2 to 4 servings.
