Ayam Kodok ( Frog Chiken )

Bahan (Ingredients) :
Ayam Kodok (Frog Chiken) :
1 ekor ayam, pilih yang segar dah kulitnya utuh *ngga ada yang sobek*
(1 whole chiken, fresh and with perfect skin, nothing is split)
2 sdm tepung roti (Bread Flour / wheat flour)
100 gr daging sapi cincang (100 gram beef meat, cut it until soft)
3-4 butir telur, kocok lepas (4 pieces of chiken egg , shake it)
1 butir bawang bombay, iris halus (1 piece of bombay onion)
garam,merica,pala sesuai selera (salt, pepper, nutmeg)
margarin untuk menumis (butter for sauting (saute))
jarum dan benang untuk menjahit (needle and string for sawing)
benang kasur secukupnya

Sayuran (vegetables) :
-wortel (carrots)
-buncis (beans/chickpeas)
-jagung semi (corns)
-sayuran di rebus setengah matang, bubuhkan garam dan sedikit gula, lalu ditumis dengan margarin (boil all the vegetables, add a little amount of salt and sugar in to it, after that saute it with butter/margarin)
-kentang, dikupas kemudian rebus sebentar lalu di goreng dengan minyak + sedikit margarin
(potato, skin it, boil ( cook together with water) it for a short time, after that, fry /saute it with oil and a little amount of butter / margarin)

Saus (Sauce) :
tulang ayam (chiken bone)
bawang bombay ( onion)
wortel (carrot)
daun bawang (spring leaves)
seledri (celery leaves)
1 lbr bayleaf (1 piece of bayleaf)
garam,merica,pala sesuai selera (salt,pepper and nutmeg)
1 sdm tepung terigu, cairkan dengan sedikit air ( 1 spoon of wheat floor, melt it with little amount of water)

Cara Membuat (How to make) :
Ayam Kodok (Frog Chiken) :
1. Kuliti ayam ...hati2 jangan sampai sobek kulitnya ...sisakan sayap dan paha bawah
(skin the chiken, becareful, try not to scratch the skin, do nothing with the wings and the thigh)
2. Jahit bagian leher...gunakan benang warna gelap untuk memudahkan mencabutnya nanti ...*cara yang diajarin sm mbakyuku ngisi dagingnya dari bagian bokong*
(Saw the neck with dark color string, for filling the meat, you can start it from the behind / chiken ass)
3. Pisahkan daging ayam dari tulangnya, cincang halus daging ayam.
(seperate the chiken meat from its bone, cut it until soft)
4. Tumis bawang bombay dengan margarin, sisihkan
(saute /cook the onion with butter / margarin)
5. Aduk tumisan bawang bombay, daging ayam cincang, daging sapi cincang, tepung roti dan telur
(mix the onion (that already cooked before) with soft cutted chiken meat, soft cutted beef meet, wheat flour and egg)
6. Masukan adonan daging dalam cangkang ayam ..pelan-pelan ya jangan sampai sobek .... kemudian jahit bagian yang terbuka.
(insert all the batter/mix into the chiken structure (whole chiken that was prepared before), slowly, try not to scratch the skin, then, saw the open/unsawed part)
7. Ikat bagian sayap dengan benang kasur, begitu juga bagian kaki, ini dimaksudkan supaya hasil ayam kodoknya benar2 menyerupai kodok beneran ..:D
(tie the wings with string, also the thigh, in purpose to make it seems like real frog)
8. Siapkan kukusan, biarkan mendidih ..kemudian kukus ayam. Sering2 dibuka ya ..ters ditusuk-tusuk supaya tidak pecah ...kukus sampai matang
(steam the whole chiken until well done)
9. Olesi loyang dengan margarin, kemudian panggang aya sampai kecoklatan, keluarkan dari loyang olesi margarin supaya lebih cantik ...
(prepare the gun metal and the margarin / butter, grill the chiken until turn to brown, pull it off, and add the margarin / butter on the top of the grilled chiken)

Saus (Sauce) :
1. Goreng tulang ayam dengan margarin sampai gosong, masukkan bahan-bahan lainnya ...biarkan layu
(cook / fry the chiken bones with butter / margarin until over done / over cooked, put in all the other ingredients, cook it together until well done)
2. Masukkan garam,merica,pala, tambahkan air ...masak sampai lembek sekali
(Add the salt, pepper, nutmeg with a little water, cook it)
3. Saring, kemudian masak lagi sambil ditambahkan tepung terigu yang sudah dicairkan, masak hingga megental
(filter the sauce, th

Penyajian (Serving) :
1. Taruh ayam pada pinggan lebar .... atur sayuran disekelilingnya
(Serve the frog chiken together with vegetables around it)
2. Sajikan saus pada mangkuk terpisah
(Server the sauce seperately in the different bowl)
